Sisters Linda, Susanna, and Jacklyn Tran realized their longtime culinary dream of sharing traditional and contemporary takes on the quintessential street food of Vietnam; bánh mì (Vietnamese sandwiches) and gỏi cuốn (fresh spring rolls) with the opening of Bánh Mì Unwrapped in Seattle’s University District.
At their quick-serve bánh mì and gỏi cuốn specialty shop, house-made sauces and spreads are combined with other fresh ingredients on daily baked baguettes from their family’s own Tony’s Bakery and Deli in Rainier Valley. Here, traditional menu items are based on their mom’s recipes, many of which were wildly popular at the family’s former Saigon Dynasty Restaurant, while new renditions are created by the sisters.
Beyond the typical grilled pork or cold cut combination sandwiches and shrimp or tofu spring rolls that are most often found, there are also alternatives such as bò kho (Vietnamese beef bourguignon) or lemongrass fish with chive pesto bánh mì. A twist on spring roll variety includes a pulled pork version made from thìt kho, a classic Vietnamese dish of slow-braised, caramelized pork typically served in a clay pot to be eaten with steamed rice.
